Inspiration for these tasty, tiny patties came from a Costco Shopping spree with my mom. She was on the hunt for Quinoa, and the only bag they had was 4 pounds. That’s a whole lot! So we ended up splitting the bag, and I took half of it home. This bag was a monster.
Yesterday was a warm, rainy day in Florida so that could only mean one thing for today’s forecast: COLD. Yep, it’s chilly here. By chilly, I really mean mid-50’s. While many out-of-state friends and family are experiencing below freezing temperatures, we are EXTRA warm blooded so this is cold to us. No judging please.
As another mean cold bug hit, extravagant valentines plans were out the window. Not that I wanted to go out to a super crowded, slow service dinner then an over packed movie in the first place, but plans had to change. Evan and I decided to stay home, make a tasty dinner and watch movies in the luxury of our home.
We wanted a juicy dinner that we don’t have every night so we opted for grilled New York strip steak, baked Parmesan asparagus, and home made garlic bread on the barbecue. Do southerns only say ‘grill’ when referring to grilling? Up north in Michigan, we used to say ‘barbecue’, so that’s what I mean. To each is own, right?
To be completely honest, this was my first time experimenting with puff pastry. For some reason I was intimidated by the delicate dough, and figured I would somehow screw it up! Boy, oh boy, was I wrong. I bought frozen sheets of puff pastry instead of making my own dough. All you have to do is thaw it out until it becomes soft, roll it out a smidgen, and it’s ready to use. Yep, that easy!
Good Morning World! Last night after a fabulous dinner with my family, I was driving home brainstorming breakfast ideas. I’ve been in a slight healthy mindset after being sick all January, then catching a stomach virus last week. So what better way to incorporate lots of nutrition back into my system?! A fruit, yogurt, and oatmeal smoothie. My mom sent me home with a whole bunch of strawberries, raspberries, and blueberries which was perfect sign that I needed to make one.
Happy Monday! I’m sure after last night’s Super Bowl, you had a pretty rough start to this first Monday in February. All those chips, snacks, burgers, and alcoholic beverages….It’s catching up! It’s time to get back on track with a hearty handful of healthy greens.
All the hype about the Super Bowl has got me SUPER excited…to make snacks for everyone coming over. I didn’t even know who was playing until about yesterday. To be fair, there are way more commercials for the puppy bowl. But my knowledge of football is neither here nor there. Let’s get down to the good stuff…the FOOD. I have not been to one Super Bowl party that hasn’t had some sort of velvety, cheesy dip. I decided to go for a yummy Three-Cheese Spinach & Artichoke Dip! Plus, there is just something so mouth watering about a salty, cheesy dip and a cold beer.
