Happy Monday! I’m sure after last night’s Super Bowl, you had a pretty rough start to this first Monday in February. All those chips, snacks, burgers, and alcoholic beverages….It’s catching up! It’s time to get back on track with a hearty handful of healthy greens.
I don’t know about you, but I have difficulty incorporating dark greens in my diet. I go through salad phases once in a blue moon, but that won’t suffice for proper vitamin intake. I never truly considered having kale as part of my dark greens until last year. I started putting kale in everything and become a #1 fan of it. Kale is a great vegetable and extremely easy to put in so many meals. You can throw it in smoothies, pasta sauces and dishes, soups, stews, casseroles… the list is endless. My favorite recipe just so happens to be the easiest of them all. Baked Kale Chips. All you need is about 2-3 handfuls of chopped, rinsed and very dried kale, oil, and any spices you choose (I prefer salt, pepper, and chili powder). I am going to emphasize the dried kale here. You want to make sure that it’s thoroughly dry with paper towels or air drying, so the chips come out crunchy. If they are wet when you put then in the oven to bake, they will come out soggy.
Once you have dried out the kale, use a baking or cookie sheet to toss it all together. Drizzle about 3-4 tablespoons of olive oil over the kale. Use your hands or a tong to mix and cover the chopped kale. Now you are ready to sprinkle on salt, pepper, and chili powder or whatever other combination of spices you please. Bake at 375º F for about 7-8 minutes or until the edges are crispy. Keep checking on it as every oven is different, and you don’t want to burn it!
You may serve this with a nice juicy steak and mashed potatoes, or a big bowl of warm pasta and meatballs. So many possibilities, what will you come up with?

10-Minute Baked Kale Chips
- 2-3 handfuls chopped Kale
- 3-4 tablespoons Olive Oil
- 2 teaspoons salt
- 3 teaspoons pepper
- 2 teaspoons chili powder
- Pre-heat oven to 375º F.
- Chop and dry kale. Spread onto baking or cookie sheet.
- Drizzle Olive Oil over kale, and mix thoroughly to coat all pieces.
- Sprinkle and gently mix in salt, pepper, and chili powder.
- Bake in oven for 7-8 minutes, or until crispy edges.
